What does dedicated hosting mean?

Your organisation runs on its own instance and does not share infrastructure with anyone else. Your data sits inside your own boundary, with retention and deletion set by you.

Can we run challenges written for our own environment?

Yes. Enterprise deployments can carry challenges built around your policies, your systems and your reporting routes, so people learn the process they are actually expected to follow.

Where is the data held?

That is part of the deployment conversation. Region is a decision you make, which matters if you have data residency obligations under local law or a customer contract.
